Banana Nut Bread

Mom -Catherine has some great recipes in her recipe box this is one of my favorite. I remember eating a whole loaf of it when I was about 7. It is also good to make if you have some bananas that are getting too ripe. Whip up a loaf and freeze it for another day.You can make it as a loaf or as muffins.
Makes 1 loaf:

  • 3 mashed very ripe bananas
  • 1/2 shortening or butter
  • 1 cup brown sugar
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 cups flour- you can do 1 cup wheat flour & 1 cup white flour
  • 1/2 cup chopped nuts(walnuts or pecans)
Cream bananas, shortening/butter, brown sugar- then add eggs salt & baking soda mix in flour and nuts then pour into loaf pan. Bake at 350 degrees for about 45 min then check every 5 min 'til done.

Grandma Bohman's Stuffing

When Grandma makes something the brands are important. She is very picky about this when she cooks. Technique is also important to the texture and flavors.
  • 12 slices of dried Home Pride Split Top Wheat Bread (yellow bag)
  • Handful of cornmeal
  • 1 eggs
  • 3 stocks of celery and their leaves chopped
  • 1/2 stick of melted butter
  • salt, pepper, and dried sage (home grown is best) to taste

Wet the bread with warm water and gently pull apart the bread, but not too much, keep the pieces big. Gently mix in the remaining ingredients. Stuff in turkey or chicken cavities. If you do not stuff moisten the bread with chicken broth for flavor and bake in a pan at 350 degrees until done but still moist.
